Peppermint Bark Popcorn

I’m a week late posting this, but better late than never, right? I could lie and say we’ve been busy taking down all of our decorations, putting things away, being productive and making goals for the New Year, but really it’s not that glamorous  Instead, the husband and I have been battling colds, being lazy, and enjoying the tree and decorations still casting a glow in our house.

Every month I look forward to receiving a package in the mail from a fellow Bakin’ Friend, and this month, our secret ingredient was one that I love – peppermint! At least every other day for a good stretch, the husband and I venture out to Starbucks for peppermint mochas. I already miss them!

I was so excited when my package from Alex of Yums and Loves arrived! She used the cutest penguin tin to hold lots of yummy peppermint bark popcorn, and she included a bag of it as well!

Normally, I’m not one to eat much popcorn (though there is a bagged one I recently fell in love with) but this peppermint bark popcorn is seriously delicious! I must have “sampled” it five times before finally deciding to save some for later! Thank you so much, Alex, for the wonderful popcorn and the recipe to make more!

Peppermint Bark Popcorn

Ingredients:

8 cups popped plain popcorn (lightly salted is okay)
1/2 pound almond bark or candy coating
1 teaspoon peppermint extract
3.5 ounces Ghirardelli peppermint bark, broken up
1 cup semi-sweet  chocolate chips

Directions:

1. Pour popcorn into a large mixing bowl.
2. Follow the directions on the package of almond bark or candy coating and melt, stirring until smooth. Add peppermint extract.
3. Pour over popcorn and stir in peppermint bark pieces. Stir until popcorn is completely coated. Spread popcorn out onto a cookie sheet lined with parchment paper.
4. Melt chocolate chips in microwave, stirring frequently, until smooth. Drizzle over popcorn.
5. Allow to harden for at least 30 minutes. Once dry, break into pieces.
